Preparation
- Put the caramel (in the Tips we tell you how to make homemade caramel) in the flan mold. Reserve.
- In a large bowl, pour the eggs, mix with the sugar and beat with a mixer until a homogeneous paste is formed.
- Add milk, condensed milk and cream cheese. Beat again until all the ingredients are well integrated.
- Pour the mixture into the mold and turn on the oven at 180ºC.
- Place the mold with the flan mixture on a deep tray loaded with a little water to make the bain-marie.
- When the oven is very hot, place the tray with the mold in a bain-marie and bake for one hour.
- Try inserting a toothpick into the flan that is already ready (if the toothpick comes out clean, it means that it can be removed from the oven, otherwise leave it for five or ten more minutes).
- Let cool for no less than half an hour. Then unmold the Neapolitan flan, take it to the fridge to cool it.
- Serve in portions with more liquid or crunchy caramel.
The usual ingredients to prepare a flan are eggs and milk. The technique with which it is made is bain-marie. But the Neapolitan flan, one of the creamiest in the world, has a secret: It has cream cheese among its ingredients, which gives it that more stable consistency and that soft, dense texture. Extremely easy to make, the Neapolitan flan is a riot of sweetness ideal for lovers of desserts at the end of the meal.
