How to preserve this nature which is located close to the largest city in the region? How to take advantage of the presence of a wild and green territory so close to the city, while respecting it?
Get out of the city, venture into the forest, listen to nature, breathe, recognize a bird song, a footprint, a tree … A luxury that we find close to Dijon, which is called the Val-Suzon.
City dwellers can no longer do without it!
Camille explains the diversity of the site’s riches to us, the most precious and endangered of which is water from the Suzon. Marlène and Paul tell us how we take care of an exceptional forest in order to preserve its flora and fauna. And to satisfy our sense of smell and taste, let’s go for a little tour of the truffle fields and starred cuisine.
The landscape shaped by the Suzon has favored human activities which have never disfigured it: sheep breeding, extensive culture, mills, coal mines, small forges. Since prehistoric times, humans have been able to dominate the valley from the top of natural headlands and read there what worries or amazes them.
Going for a walk in the forest is relaxing and stress-relieving. This is where Martine comes in, she is a mediator, a guide in sylvotherapy. Now in harmony with the trees, it’s time to join Marlène and Paul. The exception of this forest, they know it and they supervise it.
It is north of Dijon, in a small village near Is-sur-Tille that we meet activists for the truffle cause in Côte-d’Or!
And to complete our culture of truffles on the gastronomic side, let’s make a detour to a Dijon restaurant whose chef Angelo was in 2016, the youngest starred chef in France.
