How to make sweet cassava bread

Ingredients

  • 700 grams of 000 flour
  • 300 grams of cassava flour
  • 50 grams of fresh yeast
  • 300 grams of butter
  • 350 grams of sugar
  • 3 egg yolks
  • 600 milliliters of milk
  • 10 milliliters of panettone essence
  • 10 milliliters of rum
  • 10 milliliters of vanilla essence
  • 10 milliliters of orange juice
  • 200 grams of polished fruits
  • 200 grams of raisins
  • Zest of an orange

Step by step preparation

  1. Make a pre-ferment by placing the yeast in a bowl with a cup of warm milk, 4 tablespoons of flour and 4 tablespoons of sugar. Let it rest and rise until it doubles in size.
  2. On the other hand, make a crown with the flour passed through a sieve. In the center, place the butter, the remaining sugar, the essences, the orange juice and zest, and the rum. Cremation manually. Add the yolks one at a time.
  3. Add the previous ferment and make a dough. Knead until you obtain a smooth and elastic dough. Let it rest for 30 minutes until it doubles in size.
  4. Then knead again, and add the fruits and raisins. Assemble buns.
  5. Put in three sweet bread molds of 1 kilogram each. Brush the surface with egg.
  6. Bake in a preheated oven at 180°C for 45 minutes.
  7. Decorate with glaze and nuts.
