There’s always room for a little dessert, right?

Thanksgiving is just around the corner and we have prepared some traditional Thanksgiving recipes for you. Today we have the recipe for Mini Pumpkin Cakes. They’re super easy and quick to make, look great, and to top it off, taste really good.
In recent years, a trend has taken hold in the United States. To the so-called Friendship the same traditions of the classic Thanksgiving are maintained. However, while Thanksgiving is mostly celebrated with family, Thanksgiving is when you invite your friends over. It’s especially useful if you don’t currently have the opportunity to drive home or if you absolutely hate strict family celebrations with questions like “Where’s your boyfriend?” or “How are your studies going?”.
Self everyone cooks his favorite recipe and contribute to the Friendsgiving buffet, then you can actually stuff your stomach with goodies without being poor afterwards. This Tradition we would like to support. How about a Friendsgiving dinner at your house? Either way, mini pumpkin pies make perfect souvenirs. And there’s always a place in your stomach for these tarts, right?

Here’s how it’s done:

You need these ingredients:

  • 400 g Hokkaido pumpkin, coarsely chopped
  • 100 grams of sugar
  • 150 g of fresh cream
  • 3 Owner
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 1 package (270 g each) of puff pastry on the refrigerated shelf
  • whipped cream (to taste)
  • nutmeg (to taste)

Preparation is so easy:

  1. Cook the Hokkaido squash for 15 minutes until tender. Drain and leave to cool.
  2. Place the cooked pumpkin in a large bowl with the sugar, crème fraîche, eggs, cornstarch and cinnamon. Then mix everything with a mixer until a creamy mass is obtained.
  3. Cut the puff pastry into six equal squares and arrange them carefully in a muffin pan.

    Tip: The pumpkin cupcakes will rise a bit, which is why it’s best to always leave at least one empty muffin tin between the individual cupcakes.
  4. Pour the pumpkin filling into the rolled out puff pastry. Place the mini pumpkin pies in the oven according to the puff pastry packaging. Once the puff pastry is lightly browned, they’re ready.
  5. Garnish with whipped cream and nutmeg and serve!
  6. Enjoy your meal!
