Their restaurant offers a “symbiosis of science and nature” using products from their own farm.
In a statement, Michelin welcomed the emergence of a generation of talented Russian chefs and the quality of their products, including royal crab from Vladivostok, Borodino bread and halibut from Murmansk.
Among the Moscow restaurants that received a Michelin star is White Rabbit, which offers panoramic views of the Russian capital and traditional dishes in surprising combinations, such as roasted cabbage with caviar.
No restaurant has been awarded the highest award – three Michelin stars.
Called the “Bible of Gastronomy” and known for its strict standards, the first Michelin guide was published in 1900. The publisher recalls that he worked actively in Russia before the 1917 revolution.
“This is a new era for Russian restaurants,” said Russian expert Gennady Yosefavichus.
Moscow Mayor Sergei Sobyanin has expressed hope that the arrival of the Michelin guide will attract more tourists.
The company’s first culinary guides of the same name were aimed at drivers at the dawn of the automotive era, and the star system was introduced in the 1920s.
