The traditional dish of the last, cheese, week Shrovetide in Ukraine were not pancakes, but dumplings.

As the ethnographer explained, dumplings in Ukraine were called “martyrs”. The following saying was connected with this: “They endured heavy flour, boiled water, their eyes were filled with butter, their sides were stuffed with cheese. We, dumplings, dignify you and soak you in sour cream.”
According to Oleinik, until the 15th century Maslenitsa in Ukraine was celebrated for three weeks. During the first two, you could eat meat, and in the last – only dumplings.
“Three weeks before Lent, there was the end of meat, the next was a transitional, pockmarked, transient, when meat was not eaten only on Wednesday and Friday, the last week, which this year began on March 8, was cheese-free, when they no longer ate meat, but only dumplings, “she explained.
“Masnitsa was called the holiday because they said goodbye to masny, that is, fatty foods. Jellied meat, sour cream, cheese,” added the ethnographer.
During Maslenitsa in the villages they put on “Grandfather” – a stuffed animal in a hat. “The guys brought him tobacco and a pipe. He could be seen from afar, he was a sign on the roads. And in the last week of Shrovetide, Grandfather’s life ended, and he was solemnly burned.”
Another name for Shrovetide is Kolodiy. This word is associated with a deck that was tied to the leg of unmarried guys and women who had unmarried children. “They dragged the log and put out the magarych. In the last week, they actually went to visit each other,” said Oleinik.
