Co-director of Mariller les Saveurs pastries, Pauline Mariller sees 2024 as a year of success, notably with a highly anticipated opening.
You are at the head, with your brother Clément, of the Mariller les Saveurs pastry shop which has two stores in Lyon. You have both always been immersed in the world of gastronomy. What is the DNA of Mariller les Saveurs?
We are truly a family story because we are brother and sister partners. We also come from the world of gastronomy through our dad who has had a Michelin-starred restaurant in Lyon for 30 years. The DNA of Mariller les Saveurs is already family. This is really reflected in the way we run our business on a daily basis and the closeness we have with our customers in our stores. What really identifies us is creativity. We are on a different pastry. My brother is a very creative pastry chef with the desire to do things that are different from the ordinary and always with the aim of spreading a lot of joy.
You have great plans for 2024, including the opening of a third store in Lyon and not just anywhere…
We are opening our third store in June 2024 in Part-Dieu station. It’s a place that is quite atypical because it is already a station and we need to rethink consumption and products a little. Our goal is truly to delight travelers. It’s a project that made us dream because we are from Lyon and we grew up in the city. We have seen it evolve and the station has always been a very dynamic place.
What drives you on a daily basis as a business leader?
We’re not going to hide the fact that it’s not easy every day, but that’s what also makes the charm of being a business leader. We get up in the morning and we don’t necessarily know what awaits us. There are always unforeseen events and that’s what’s really nice.
