Established for 18 years in Croisé-Laroche, Lætitia and Jean-François Pasbecq, the owners, did not hesitate to invest 200,000 euros to refurbish their bakery and pastry shop this year.

Maison Pasbecq, which has existed for 26 years, is located on the Grand Boulevard, near Croisé-Laroche, for 18 years. The story of Jean-François Pasbecq and Laetitia begins at the Yanka caterer, rue Nationale, in Lille. They meet during their apprenticeship… and get married. In 1996, the newlyweds took over a bakery and pastry shop in Tourcoing, to improve their skills, before settling in Marcq-en-Baroeul in 2004. We had always wanted to create our own brand, or at least take over one together and from Joy Pasbecq.

Above all a pastry

Macaroons, marvelous, three-chocolate cake, opera or traditional baguette: for 18 years, the Pasbecq team has been making all its breads and pastries on site. ” Everything is done the old fashioned way. The baker arrives at 1 a.m. The bread is made, kneaded and baked the same day. The brand trains several bakery and pastry apprentices and also hires students to work as sales assistants. In total, 14 employees work in the shop, which is first and foremost a pastry shop, underlines the owner: “ 50% of our sales are pastry, 15% bakery and 15% pastries. We also sell chocolates, catering products and ice cream. »

Two hundred customers a day

For its 18th anniversary, the House, which receives on average 200 customers per day, has been completely redone. From the shop window to the floor via the walls, the 300 m2 building (including the two laboratories, the office and the changing rooms) was renovated over three weeks. The modernization works cost 205 000 euros without taxes. If the bill is high, the owners have still received financial assistance. ” We received a check for 12,500 euros from the town hall.
