While traditional tiramisu packs a punch with mascarpone and ladyfingers, this version uses significantly less fat and has the sweetness of maple syrup. It contains less sugar and, when dosed in moderation, reduces the calorie balance. Tanja replaces the sponge cake with gluten-free rice cakes. Dipped in espresso, they’ll give you an early morning energy boost.

And that’s how it works
Briefly dip the rice cakes into the freshly prepared espresso: make sure that they only soften slightly but do not fall apart. Now stir the maple syrup well into the Greek yogurt. Then it’s time for the layers: First place one of the soaked rice cakes in a bowl, then add a layer of your yoghurt mix on top. Repeat the process until all ingredients are used up. Finally, sprinkle some baking cocoa over the top layer to refine the tiramisu and give it a chocolaty note.
Enjoy it!
