The City of La Roche-sur-Yon has been offering since May a new culinary rendezvous baptized “Les Halles in the kitchen” . And Saturday per monthof the chefs yonnais agreed to play the game and present their know-how by cooking live local products from the Halles market.
After a first meeting on May 21 with the chefs of Le Karo restaurant, it’s the turn of Nathan Cretney, chef at Les Reflets restaurantin Saint-André-d’Ornay, to go behind the stove this Saturday, June 18 between 10 and 12 a.m.
The Yonnais chef will concoct a risotto with two cheeses and asparagus, hazelnuts and herbs.
Nathan Cretney, a chef in harmony
Of British origin, Nathan Cretney arrived in France in 1995 at the age of 10. A summer professional experience on a campsite made him want to discover the profession of cook and enroll in a hotel school. His diplomas in hand, Nathan Cretney begins a small world tour, in Brazil, in Miami to perfect his gastronomic culture.
Back in France, with new skills in cooking and pastry, he stopped in the Médoc, where Philippe Raoux gave him his confidence by appointing him chef of his restaurant Le Wy.
His route brings him back to Vendée, to a 4-star château referenced “Les Collectionneurs” where he also develops his managerial and logistical skills through his position as chef.
Knowledge and skills that are already caught the eye of the Michelin and Gault & Millau guides.
This recognition only fills the thirst of Nathan Cretney who then decides to confront his know-how. He took part in the French Desserts Championship in 2012 and in the Toque d’Or de la Pâtisserie competition in 2013.
The logical next step for him was the creation of his own restaurant. A wish realized since March 2018, in the district of Saint-André-d’Ornay in La Roche-sur-Yon where he opened, with his companion, the restaurant Les Reflets. A discreet, intimate table in which the chef delights in harmonious and convivial cuisine.
Recognized as a Young Talent by Gault & Millau and became the first chef at the National Competition for the Best Artisans of France in 2019, he saw his talent once again honored in 2020 by the Michelin Guide, which awarded his restaurant the “Bib Gourmand” label, which rewards restaurants that include generosity and excellent value for money in their menus.
