Koopmans has shared in a press release that the mixes for oliebollen are not all good because of the lack of yeast. “This is not harmful,” emphasizes the company. But baking oliebollen will not work with it: “The batter will not rise and we advise you not to use this product.”

An oliebol has to be light, says oliebollen baker Frank Vale from Roosendaal. You can’t do that without yeast. “If you don’t use yeast in your batter, you won’t get a light batter. Then it becomes a greasy sponge, I think. You get a soggy and chewy lot without air in it,” he says. “Baking without yeast is like playing football without shoes.”

If you have a Koopmans baking mix in your cupboard with the date 03-02-2022 on the top and the production code L212447 and a time indication between 2.30 am and 5.00 am, it is better to get a new one quickly. If you send the top of the packaging to Koopmans, you will get your money back.
