KKP Develops Nutrient-rich Healthy Boba Innovation from Seaweed

The Ministry of Maritime Affairs and Fisheries (KKP) developed an innovation of boba (small, chewy textured balls of various colors that are often found in sweet drinks) from seaweed which is considered healthier than tapioca boba.

Sakti Wahyu Trenggono, Minister of Maritime Affairs and Fisheries in a press release in Jakarta, Saturday (2/10/2021), encourages the emergence of innovations in the marine and fisheries sector which are important, among others, to diversify processed marine and fishery products, including increasing the value of marine and fisheries products. add product.

In addition, the presence of various innovations from the KKP is ultimately expected to be utilized by the community to improve their welfare.

Regarding boba, a number of studies have revealed that tapioca boba can trigger digestive disorders. The reason, boba has a low nutrient content, especially fiber.

KKP through the Research Center for Marine and Fishery Product Processing and Biotechnology (BBRP2BKP), the Marine and Fisheries Research and Human Resources Agency (BRSDM), has made an alternative product innovation to replace tapioca boba, namely healthy boba from sea grapes which is a type of Caulerpa seaweed. sp.

From a series of research, healthy boba from sea grapes has the potential to substitute boba from tapioca flour, because of its complete nutritional content. Basically, tapioca flour has low nutritional content and does not contain minerals.

The use of sea grapes in making boba can produce healthy and nutritious boba, because Caulerpa is rich in nutrients because it contains protein, dietary fiber, amino acids, Omega 3, 6 and 9 fatty acids, and minerals.

Apart from its nutritional content, this innovation also overcomes the weakness of Caulerpa, namely the shelf life in a fresh state which is only 2-3 days. Caulerpa processing into boba still maintains the image, aroma, taste, nutritional quality, as well as the shape and texture remains fresh, but can be stored and ready to be used as a topping for boba drinks.

Various advantages of healthy boba sea grapes, which contain sources of vegetable protein (17-27 percent); high antioxidants, because it contains complete vitamins (vitamins A, B2, B3, B12, C, and E); and contains amino acids (glutamic acid, serine, alanine and other amino acids).

Not only that, healthy boba sea grapes also contain sources of minerals, such as calcium, potassium, magnesium, iron, manganese and zinc; contains insoluble dietary fiber which helps prevent colon cancer, constipation and hemorrhoids; and has a low fat content so it is safe for those of you who are on a diet.

The prospect of developing healthy boba from sea grapes was developed by BBRP2BKP researcher, Nurhayati and her colleagues. The results of this research have also been included in the 112 Innovations of Indonesia 2020 and can be accessed at http://bit.ly/112BIC2020.
