“Kitchen revolutions”. It was not without throwing plates. It was about bechamel

Magda Gessler’s “Kitchen Revolutions” visited Krakow. However, it is hard to find tourists in areas further away from the center. The place visited by a well-known restaurateur is located a few kilometers from the market square, at £ okietka street.

10 years ago Maria came to Krakow with her ex-partner. They both wanted to open something of their own. The choice was a restaurant, which the owner always dreamed of. Trattoria da Maria restaurant is a true family business. The chef is the owner’s brother, who is Italian. Maria is more of a mother than a boss to employees.

The appearance of the restaurant did not impress Gessler. Let us add that it was in vain to look for windows in the whole room. Magda Gessler ordered carpaccio and lasagne. The meat for the first course was frozen for a month, and the cook thawed it by rubbing it. Lasagna was also stored in the refrigerator. And although it was the chef’s grandmother’s recipe, the dish landed on the floor. According to Maria, the reason was to be too much béchamel and not enough meat.

The car was standing in the corner, it was called Italy and it landed on the floor, replied Magda Gessler.

While watching the restaurant from the kitchen it was no better. The restaurateur was horrified by the layers of dirt on the eaves.

Everything is just confused. Nice shit, like a big cockroach. Why are there no people here? Because people are not stupid and they feel that shit – summed up Magda.

Gessler had serious face-to-face conversations with both owners, and it would seem that pointing out the errors clearly did the trick. The entire crew mobilized themselves to finally be able to bounce off the proverbial bottom. Everyone started cleaning up – even Rizzieri was integrated, but Maria still couldn’t control her emotions and Magda’s nerves were gone.

I’m not announcing changes today, I’m screwing it. Take control, woman. You are in business, you roar all the time, you have the face you have, get out of here, fuck, take a walk. It’s just unbearable, she exclaimed.

It seems that this is exactly what Maria needed. The constant stroking on the head had opposite effects. The owner quickly calmed down, finally got involved in managing, and the kitchen passed the cleanliness test.

Course of the revolution

The new name of the restaurant is “Karczochy u Marii”. The interior of the former Trattoria has changed beyond recognition. The pink walls were painted olive green, above the fireplace there were themed graphics referring to the name, there were also fresh vegetables. There was also a revolution on the card. The first course was Żurka with artichokes on Krakow’s smoked sausage, then gnocchi with pesto, and finally liver with artichokes in onion-wine jam. The guests were delighted with the leitmotif, the name of the restaurant, the atmosphere of the place, and the dishes served. The revolution ended with a great success.

Unfortunately, the coronavirus pandemic meant that despite its potential, the restaurant had no chance to break out. For a long time, the place remained empty, and the revolutionary enthusiasm faded somewhat. The situation took its toll on the restoration industry, but the place defended itself with taste, and Magda Gessler signed the revolution with both hands.
