Käser from Beromünster wins the world championship title for the second time

It’s no secret that Switzerland has good cheese. The Fläcke-Chäsi in Beromünster has just proven that again. She won gold with two cheeses at the World Championships in America.

They are called «Alte Geiss», «Altes Schof» and «Blüemlichäs» and even if two names do not exactly make your mouth water: These «Fläcke-Chäsi» cheeses are among the best in the world. The “old Schof” won the world championship title in 2020, and in 2022 the “old Geiss” and the “Blüemlichäs” also won gold. That makes the business owner more than proud: “It’s also simply a pleasure to present the world champion cheese to the customers and give them a try,” says Petra Scheuber PilatusToday.
Tried 3000 cheeses
But before the cheese lands on the counter, there is work to be done. The 3500 liters of milk are not the only ones that are needed today. “Today, 1,000 liters of sheep’s milk have already arrived, and 600 liters of goat’s milk,” says owner Franz Scheuber.
And they are now being processed. Careful production is certainly an important point that has led to the goal, says the business owner. A total of 3000 cheeses were tried in various categories at the championships in America. Despite these two world championship titles, the Scheubers remain modest. “We are very convinced of our products and we are passionate about it, but we didn’t expect that,” says Franz Scheuber.

In addition to production, the maturing of the cheese is also an important step. For example, the “old man” has been in the cellar for six crucial months. «We brush them every day according to an ancient recipe. This means that the cheese matures more slowly, but the aroma of the milk comes out much better. That’s what distinguishes the two cheeses.”
«We want the world champion cheese»
A technique that is obviously worth it. Customers sometimes come from far away to buy the special cheese. “Some of them also remember that about two years ago we won the world championship title with sheep’s cheese. They come into the store and say they would like the world champion cheese.”
They are also constantly working on new types of cheese. Perhaps there will be another world champion on the counter in two years’ time.
