Jérôme Vacchaidre, manager of the Air Cure tavern in Nancy, deciphers this phenomenon for us. A bar, sofas, tents, a dance area, picnic tables have been set up in the large Parc de la Cure d’Air, on the heights of Nancy during the summer. A food truck allowed customers to taste original hot dogs, all complemented by a soft and catchy musical selection. But behind this seemingly simple installation actually hides an entire organization. Indeed, Jérôme Vacchaidre specifies: “We managed the entire tavern and it is a big job upstream”.
For the restaurateur, the open-air cafes are very interesting from an economic point of view. However, the recipes could have been better this year, if the summer weather had been better. He adds all the same: “It is enjoyable to realize a project of open-air cafes on the short term: the ephemeral aspect appeals to consumers, as well as the simplicity that brings the whole family together.”. In addition, the taverns have enabled Nancy residents to discover their city from a new angle since they are often found in original places where activities are usually lacking.
This very special “guinguette spirit” will remain the spirit of this summer 2021. Nevertheless, it could well extend into winter. Mr. Vacchaidre and his team have received the agreement of the city to set up winter version taverns throughout the month of December, on Nelson Mandela Square, in front of the Court of Appeal in Nancy. A phenomenon that is just waiting to spread to other times of the year, to the delight of Nancy residents.
