Saskatoon-based NRGene Canada is trying to learn more about black flies in order to turn the larvae into food for animals, fish… and who knows, maybe one day humans?
Insect flour, protein bars made from locusts, these food products are definitely on the market.
NRGene Canada seems to have understood the growing trend of insect-based food since the company plans to focus on the exploitation of fly larvae in the near future.
A project that does not surprise Sylvain Charlebois, director of the Agri-food Analytics Lab. Studies show that we already eat insects without knowing it. This insect market is not new in the country since Ontario already has the largest cricket factory.
The professor adds that we are at the beginning of a new era that will allow us to reduce the costs and energy associated with the production of certain products. This market will really oppose large productions such as beef or lamb, which are expensive and pollute a lot.
Sylvain Charlebois also discusses the nutritional benefits present in insects and invites consumers to remain open-minded.
