When a first love is a real love, it inevitably leads to great achievements. This is what Cindy Desbiens and Enrico Girard experience when they open the Incontournable restaurant in Baie-Saint-Paul.
The restaurant will be located at 1, rue Ambrosie-Fafard. The address may sound familiar, and with good reason. Before the transaction formalized on Monday, April 17, the establishment was called chez Pineault, for 13 years.
Enrico Girard had worked in this restaurant as a cook for six years. He wanted to become his own boss and “an undeniable offer arrived,” he says. “Our intention was to own our own establishment,” he adds.
The restaurant will open no later than the beginning of May. “The menu will remain the same. It will remain family, but dishes will be added to put it in our color, ”said the new restaurateurs.
Much is said about the restaurant industry, but the couple’s main intention is to ensure that their restaurant becomes, as its name suggests, a must for residents and visitors.
“There is pride in the dishes we serve. A restaurant outing is fun. We work in happiness”, emphasizes Enrico Girard. “We do what we love,” adds his wife.
In recent years, Cindy Desbiens worked for the Charlevoix-Est Community Assistance Service. However, the restaurant industry is a territory known to her, who worked in a restaurant for three years before becoming a mother.
The two co-owners will each have their department. “Me, my strengths are more in administration and Enrico in the kitchen,” explains Cindy Desbiens.
L’Incontournable has a 36-seat indoor dining room and a 30-seat terrace.
In addition to the owners, several people will find work at the restaurant, which is looking for dishwashers, assistant cooks, clerks and servers.
