Luminita Catană, a nutritionist from Arad, also educated in Germany, reveals how to prepare the salad with celery, apples and walnuts. What’s more, it explains the benefits of each ingredient used.

Nutritionist Luminița Catană believes that salad with celery, apples and walnuts is the best side dish. “What goes better with a slice of toast or a piece of steak than a salad? And not just any salad. One with celery, apples and walnuts,” she wonders.
For this recipe (quantity for one person) you need:
– 125 grams of cleaned celery (the root part is used for this salad)
– an Apple
– a few walnut kernels
– two tablespoons of vegetable mayonnaise
– lime essential oil
– linseed or olive oil
Method of preparation:
The washed and clean celery is put on a large grater. Sprinkle it with a little lemon juice to prevent it from oxidizing. Cut the apple into fine sticks, which you sprinkle with lemon juice to keep its color. Mix the apple with the celery, add a little salt and leave for a few minutes. Add mayonnaise. Although optional, it makes the salad creamier. Add the flax or olive oil as well as the essential oil. At the end, add the walnuts and, for a more pleasant taste, you can fry them a little before in a pan, but without oil. For a savory effect, you can hydrate them. It depends on everyone’s taste and preferences. Allow the flavors and textures to infuse and serve. Simplicity and rich taste, aroma and sophistication on the plate.

With the Latin name Apium graveolens, celery is a complete plant, from which we can use both the root and the stalks and the leaves. They strengthen bone density, support neural functions, have antioxidant properties, stimulate digestion, maintain skin health and are excellent for pregnant women and nursing mothers.
They regulate cholesterol and improve sleep. It stimulates the memory and where else do you put the taste? (Between us, who doesn’t love pecan cookies?) Beyond the calories, they win you over with their presence, being pastry royalty. They are considered the meat of vegetarians, due to their high protein content.
Lime essential oil
It’s what brings the contrast and flavor to this seemingly simple salad, but with so many benefits. Only three to four drops of lime oil are added to the composition. It has a pleasant taste, subtle aroma, stimulates lymphatic drainage, blood microcirculation and has anti-inflammatory properties. Refreshing and tonic, it puts the dot on the “i” in any dish.
Flaxseed oil
It has a specific taste and is rich in Omega 3, vitamin E, B complex vitamins, carotene, magnesium, sulfur, calcium, potassium, manganese, cobalt and molybdenum. It supports the bone and cardiovascular system, regulates blood pressure, keeps asthma and allergies under control.
Linseed oil is useful in menopause, useful in skin conditions, especially neurodermatitis and psoriasis. It regulates cholesterol, is an exceptional antitumor and supports the immune system. It has a specific taste, but once you get used to it, you will love it.
