It’s very easy to make persimmon jam! Here are the steps to follow:
Clean the skin and spines of the kaki fruit. Cut them into pieces and put them in a pot, along with the lemon juice. Place the pot over medium to low heat and bring the mixture to a boil (about 5 minutes). With the help of a hand mixer or a fork, chop the fruit and leave it on the fire for 10-15 minutes. Add the ground chia seeds and vanilla paste/extract (optional) to the pot. Mix and leave on fire for another 2 minutes. Remove the pot from the heat and place the mixture in a blender. Blend until desired texture and consistency are achieved. Pour the kaki jam into sterilized jars and cover with lids. Jars of kaki jam are kept in the refrigerator or in a cool place, away from the sun’s rays.
