Ammon – Labneh kibbeh is a delicious and famous meal in Lebanese cuisine. Here is how to prepare labneh kibbeh:

For the filling:
– 1 cup minced meat (beef or lamb)
– 1 medium-sized onion, chopped
– 2 tablespoons vegetable oil
– 1/2 teaspoon spices (7 spices)
– Salt and pepper to taste

For the dough:
– 2 cups semolina (fine bulgur)
– 1 cup yogurt
– 1/2 cup warm water
– 1 teaspoon salt
– 1/2 teaspoon semolina gum (optional)

Steps:

1. Start preparing the filling. In a large frying pan, blanch the minced meat in boiling water for 10 minutes. Then filter it and spray it with cold water to remove excess oils.

2. In the same pan, heat the vegetable oil and sauté the chopped onions until they become translucent.

3. Add the boiled meat to the onions and stir them together.

4. Add the spices and stir the mixture well until the flavors blend. Then let the filling cool.

5. After preparing the filling, prepare the dough. In a large bowl, mix semolina and yogurt and leave for 15-20 minutes until the semolina absorbs the yogurt and becomes soft.

6. Add warm water and stir the dough well. If the dough is dry, you can add semolina glue to make it soft and easy to shape.

7. Divide the dough into small balls.

8. Open each ball of dough to form a small circle.

9. Place a teaspoon of the filling in the middle of each circle of dough.

10. Close the dough around the filling to form a square or spherical ball. Then gently press on the kibbeh to flatten it slightly.

11. Heat the oil in a deep frying pan over medium heat.

12. Fry the kibbeh in oil until it becomes golden and crispy.

13. Serve hot labneh kibbeh with yogurt or Arabic bread.
