the components:
– 2 pieces of lamb leg, cut into large pieces
– 1 teaspoon of black pepper
– 1 teaspoon of cardamom
– 1 teaspoon of cloves
– 2 sticks of cinnamon
– 4 bay leaves
– 2 large chopped onions
– 1 tablespoon of salt

For fun:
– 8 cups of freekeh
– 4 tablespoons of oil or ghee
– 2 large chopped onions
– 1 tablespoon of mixed spice
– 1 teaspoon of cinnamon
– 1 teaspoon of ground cardamom
– 1 teaspoon of ground cumin
– 1 tablespoon of salt
– 1/2 teaspoon of black pepper
– 3 cups of peas
– 1 cup of fried almonds, cut into halves

How to prepare:

1. Wash the freekeh several times to get rid of dust and dirt, then soak it in warm water.

2. Place the piece of meat and the correct spices in a pot on the fire and cover it with water. Boil the meat until cooked.

3. After boiling, filter the meat broth and reserve it.

4. In a large pot, put the oil and heat it over medium heat. Then add the onions and stir until golden.

5. Drain the freekeh, add it to the onions, and stir until it dries.

6. Add the filtered meat broth and spices (cinnamon, cardamom, cumin, salt, and pepper) to the freekeh and leave it on medium heat for about 15 minutes.

7. Add the peas and boiled meat pieces to the freekeh and leave it on low heat for about half an hour.

8. Gradually add the meat broth to the freekeh as needed until it is completely cooked.

9. Place the freekeh in a serving dish and distribute the meat pieces and almonds on top.

10. Serve the freekeh with meat and enjoy your meal.
