Dry molokhiya ingredients:
– A kilogram of dried molokhiya.
– Two chickens are correct.
– Two tablespoons of fresh lemon juice.
– A teaspoon of hot pepper.
– Half a tablespoon of minced garlic.
– Two tablespoons of vegetable oil.
– Salt and ground black pepper as desired.
– Mastic beads (optional).
– Cardamom pods (optional).

Chicken and Freekeh Ingredients:
– 400 grams of freekeh.
– Finely chopped onion.
– A tablespoon of cumin.
– A tablespoon of coriander.
– A teaspoon of: turmeric, cinnamon, chili powder, and vegetable oil.
– Salt and ground black pepper as desired.

Frying ingredients:
– Three tablespoons of vegetable oil.
– Half a tablespoon of minced garlic.

How to prepare:

1. Preparing chicken with freekeh:
– Place the freekeh in a deep dish, add the chopped onions and vegetable oil, season it by adding spices, salt, and black pepper, and mix the ingredients well.
Stuff the chicken with the freekeh mixture and close it with cooking thread.
– Put a tablespoon of oil in a deep pot and brown the chicken in it, then cover it completely with water and leave it on the fire until the water boils.
Cover the pot and let the stuffed chicken cook over medium to high heat for about 20 minutes.
– Remove the chicken from the heat, strain the broth and keep it aside.

2. Preparing molokhiya:
– Put the vegetable oil in a deep pot and fry the chopped garlic with the spices in it and stir.
– Add the chicken boiling broth to the pot and leave it until it boils, then add the molokhiya and stir well.
– Add lemon juice when the molokhiya starts to boil, then add the very hot taqlid and stir with the molokhiya.

3. Pour the molokhiya with the chicken stuffed with freekeh into suitable serving dishes and serve.

4. Preparing the taqliya:
– Sauté a tablespoon of chopped garlic in the oil, then add the coriander and stir.
– Add the garlic and coriander mixture to the molokhiya, stir well, and leave the molokhiya on low heat for a minute.

5. Season the chicken with salt, black pepper, lemon juice, and the spice mixture.

6. Heat a lot of vegetable oil in a frying pan and brown the chicken pieces, flipping them on both sides, until they become crispy.

7. Mix the onions with vinegar and serve with molokhiya stuffed with freekeh, white rice, and toasted bread.
