Apples are delicious, but it seems that there are many people who buy too many or receive too many apples and are unable to eat them right away, so they have to store them.
We spoke to Momoko Satomura of the Aomori Prefecture Apple Control Council about how to preserve apples at home.
Does the storage capacity differ depending on the variety?
Is there a difference in how long apples can be kept depending on the variety?
“Apples can be said to have a long shelf life among fruits, but depending on the variety, they can be divided into “those that don’t keep long” and “those that keep a relatively long time.” Generally speaking, “Apples that are harvested early have a long shelf life.” “No,” and “Many varieties that are harvested late have a relatively long shelf life.” (Mr. Satomura)
Could you please tell me specifically about the differences in harvest time depending on the variety?
“The earliest-harvesting variety is the Gokuwase variety, which is harvested in August. Koisora is an example of this.
Next, the early-ripening varieties “Tsugaru”, the mid-ripening varieties “Wasei Fuji”, and the late-ripening varieties “Fuji” and “San Fuji” are harvested in that order. I think you can imagine that storage capacity increases in the order of very early ripening → early ripening → middle ripening → late ripening.
Very early and early apples are no longer available at this time of year, but since they have a low shelf life, we recommend that you eat them as soon as possible after purchasing them from next year onwards.
The late-ripening variety “Sun Fuji” has a higher shelf life than the mid-ripening variety “early Fuji,” and the same late-ripening variety “Marsupuku”, which is cultivated in a bag, has an even better storability. Tai) Fuji”. Marsupuku Fuji is often sold under the name “Fuji” in stores.
The harvest season in Aomori Prefecture is from the end of October for Marsupukuji and from the beginning of November for Sun Fuji. Marsupuku Fuji that is scheduled to be shipped from the following spring onward is stored in a special refrigerator to maintain freshness after being harvested in the fall, and is shipped until August of the following year.” (Mr. Satomura)
How to preserve it at home to make it last longer
“Apples are a fruit that doesn’t like heat, so it’s better to keep them in the vegetable drawer of your refrigerator than to keep them indoors with a heater on, even in cold weather.
When storing it in the refrigerator, put it in a plastic bag and close it tightly, or wrap it in plastic wrap and seal it before storing it.” (Mr. Satomura)
What is the reason for sealing it?
“One is to prevent the moisture in the apples from evaporating. The other is to prevent the effects of the ethylene gas emitted by the apples from spreading to other vegetables and fruits stored in the refrigerator. is.
Ethylene gas acts like a growth hormone for plants, so it causes other vegetables and fruits to ripen faster than necessary.
On the other hand, for unripe and hard kiwis, adding apples along with them has the effect of accelerating ripening.” (Mr. Satomura)
There may be times when you have to store apples for a long time, either by buying a box or by receiving one.
“If you need to store the apples for a longer period of time than usual, wrap each apple in newspaper or kitchen paper and place them in a plastic bag to make them last longer.
If you are having trouble, at least wrap it in plastic wrap and store it in the refrigerator.
Additionally, apples are sensitive to heat and temperature changes, so once you have purchased apples in the refrigerator, we recommend that you do not take them out of the refrigerator until you are ready to eat them.
If you take it out of the refrigerator, leave it in a warm room for a day, and then put it back in the refrigerator, the quality will deteriorate.” (Mr. Satomura)
Does it become sweeter when chilled?
“Among the sugars contained in apples, fructose, also known as fructose, has the highest proportion. The crystalline form of fructose has the property of increasing sweetness at low temperatures, so eat apples cold. You can feel the strong sweetness.” (Mr. Satomura)
As Mr. Satomura mentioned earlier, some apple varieties do not last long. Even if you keep it in the refrigerator or in a sealed plastic bag, try to eat it as soon as possible.
This is the season when apples of various colors and sizes are lined up in stores, so choose your favorite variety and enjoy the seasonal deliciousness.
