“Hotvolee”: Marktheidenfeld restaurateurs conquer Würzburg

The name is already known to many people from the region, and a “Hotvolee” restaurant is now also opening in the cathedral city. While the focus in Marktheidenfeld (Lkrs. Main-Spessart) is mainly on burgers, the motto in Würzburg should be different: street food. Behind it are Markus Schubertrügmer and Christian Papke, two passionate restaurateurs who, among other things, organized Würzburg’s first street food festival two years ago.

“We are planning a modern and healthy kitchen,” says Schubertrügmer in an interview with this editorial team. “For the modern flexitarian, if you like to call it that.” So for people who have a predominantly vegetarian diet, but who also occasionally eat high-quality meat. The two restaurateurs attach great importance to regionality and seasonality. As in Marktheidenfeld, there should also be burgers, but the trademark should be healthy cuisine such as salads or falafel. “Würzburg opens up completely different possibilities for us to let off steam creatively and to expand,” says the restaurateur.

The opening is planned for the beginning of May

The restaurant will open in Theaterstrasse – where the “Al Baguetta was until recently – and will specialize in to-go and delivery service for the time being because of the corona pandemic. Although both of them had” consumed “their reserves because of the pandemic, they wanted to Seize the opportunity and bring “Hotvolee” to Würzburg. The shop is small and therefore lends itself well to the two men’s plans, said Schubertrügmer. The opening is planned for the beginning of May.

One or the other may already know “Hotvolee” from television. Last year, Schubertrügmer and Papke took part in the Kabel-1 cooking program “Mein Lokal, dein Lokal”. The moderator and star chef Christian Lohse visited the Marktheidenfeld restaurant.
