Henke, Hahn, Henss go: day pass

As Gault&Millau found out, the chefs are leaving Nicholas Hahn (“Ai Pero” / 2021: 17 points) and Sarah Henke (“Yoso” / 15 points) and sommelier Marian Henss (“Pure” / 18 points) the Andernach catering company of the Doetsch family.

Henss changes as “Director of Restaurants” in Nick Bril’s Antwerp “The Jane”, Nicholas Hahn cooks temporarily in a pop-up in Sardinia, Sarah Henke is looking for a new place of work in the region.

Christoph Wirtz, Editor-in-Chief of the Gault&Millau Restaurant Guide, wrote about this change in personnel in a newsletter dated June 10, 2022:

“Gault&Millau 2022 will be published on June 20th – and with it, on page 49, the assumption that Nicholas Hahn, who we count among the absolute top talents of his generation at the stove, will become part of the Andernach gastro empire with his “Ai Pero” (2021: 17 points). treated a bit neglectfully by the Doetsch family, urgently deserve an adequate stage. He now finds them elsewhere faster than expected: Hahn left the company at the beginning of the month under extremely unpleasant circumstances. And not only him! Remarkably, the culinary lover projects of Rolf and Petra Doetsch, which have been extremely successful over the years, have also managed to lose the exceptional chef Sarah Henke (“Yoso”, 15 points) – and with Marian Henss also one of the most capable restaurant managers and sommeliers of the Republic (“Purs”, 18 points).”

“The extent of the loss of Henss for the gastronomic scene in this country becomes clear when you consider where his path will take him next: as “Director of Restaurants” with extensive responsibility in Nick Bril’s Antwerp “The Jane”. Nicholas Hahn is sorting the offers for a few weeks in a chic pop-up on Sardinia (with the participation of Tohru Nakamura) and Sarah Henke will certainly not be looking around for too long for a new place of work.One can only wish the Doetschs that they do something in the region – otherwise it could be that Christian Eckhardt also disappears from the scene. He is not only the outstanding chef of the “Purs”, but also married to Sarah Henke…”
