While some foods don’t need to be fully cooked to be safe, others could make you sick. To avoid disasters, we have made a small list of foods that you absolutely must cook well.

Fruits, beef tartars, carpaccios, raw vegetables… Many foods can be eaten raw or not fully cooked. However, this is not the case for all foods. It is therefore important to know what does and does not require full cooking. Indeed, if you eat raw food that needs to be cooked, you risk getting sick and having a very bad time.
Here are the foods to never eat without having cooked them
- Potatoes : even though it may take a long time to cook them, it is still very important. This is because potatoes can be poisonous if they are not fully cooked. They contain a toxic agent, called solanine, which can be very harmful if consumed in high doses by humans, but also by animals. It attacks the digestive tract and can cause nausea, vomiting, diarrhea and even death. Fortunately, the solanine is completely eliminated during cooking.
- The eggplants : they also contain solanine, although there is less of it than in the potato. To be on the safe side, it is still best to avoid eating them raw.
- Green beans : they contain a concentration of lectin, a molecule contained in their seeds, which appears during their growth. To eliminate it most effectively and thus avoid digestive disorders, the green beans should be cooked at at least 75 ° C in a saucepan of boiling water. This also applies to yellow and red beans.
- The mushrooms : some can be eaten raw, but they are rare. This is the case with button mushrooms and porcini mushrooms, occasionally. Morels, on the other hand, contain hemolysin, a molecule that destroys red blood cells.
- Chicken and pork: no worries for veal and beef, which can be eaten as a tartare, but this is not the case for chicken and pork. Raw, these meats contain two bacteria that can cause food poisoning, salmonella and campylobacter. They are responsible for intestinal diseases such as gastroenteritis or typhoid fever.
- Eggs : raw, they present a risk of salmonella poisoning. It is therefore very important to cook them before eating them.
- Flour : yes, licking your spoon when you bake a cake or cookies is not a good idea… Indeed, the raw flour could carry traces of E. coli, a bacterium responsible for many digestive disorders. As the bacteria contained in the flour die as soon as the temperature exceeds 65 ° C, this is not a problem for preparing cakes, fries, cookies or even pancakes.
