In fact, it is about the creation of Julien Meuniera pastry chef from Vichy who has proven himself in several hotels in Corsica and Saint-Barthélémy. How to make a successful flankie?
Of course, the recipe may seem intimidating, but in reality, there is nothing very complicated. Just carefully follow the steps and of do not neglect rest times. When you leave, your flankie will be even better!
Ingredients (for 8 people):
For the cookie dough:
- 140 g of flour;
- 110 g of 66% dark chocolate
- 100 g of softened butter;
- 75 g caster sugar;
- 50 g of caster sugar;
- 1 egg;
- 1 g of baking powder;
- 2 g of fleur de sel.
For the flan maker:
- 560 g of whole milk;
- 190 g of liquid cream;
- 150g de sucre;
- 75 g of butter;
- 45 g of cornstarch (Maïzena type);
- 20 g of liquid vanilla;
- 8 egg yolks (160 g);
- 1 vanilla pod.
Preparation :
- Start by preparing the cookie dough by mixing the softened butter with the caster sugar and brown sugar in a salad bowl.
- Add the egg, flour, baking powder and fleur de sel.
- Crush the dark chocolate into chips, then add them to the dough.
- Reserve the dough in the refrigerator for 2 hours.
- Spread the cookie dough into a dessert circle 20 cm in diameter and 4.5 cm in height before storing in the freezer.
- Meanwhile, prepare the flan mixture by beating the egg yolks with the sugar and cornstarch in a salad bowl.
- In a saucepan, heat the whole milk, the liquid cream, the liquid vanilla and the contents of a vanilla pod. Bring to a boil.
- Pour the mixture into the salad bowl then stir everything.
- Preheat the oven to 170°C (th. 5).
- Once well mixed, pour the mixture back into the saucepan and heat over low heat.
- Add butter in pieces and stir until smooth and thick.
- Pour the flan mixture onto the cookie dough and bake for 40 to 45 minutes.
- Leave to cool for 2 hours before unmolding. Then, reserve the flankie in the refrigerator for 2 hours before eating.
