Light and crunchy, the ganses are traditional Mardi Gras donuts. They have different names depending on where you live: ganses in the Nice region, lies in the Vésubie valley and the Roya valley or even croquants in Barcelonnette and in the Ubaye valley.

The recipes are even more numerous. Each family has its own: with or without crème fraîche, with or without alcohol, with or without yeast… This year, we asked grandma Jacqueline, candidate for the big braid competition for the Nice 2024 carnival, to prepare these for us. diamond-shaped treats.

  • 3 eggs
  • 350 g flour
  • 3 tablespoons of crème fraîche
  • 30 g of powdered sugar

  • Mirabelle plum alcohol (because Jacqueline is from the Vosges!) Otherwise, it’s orange blossom for the people of Nice.

You will have noticed that in this recipe, there is no orange blossom. And for good reason, grandma Jacqueline is from Vosges, so she replaced the orange blossom with Mirabelle alcohol.

After this little clarification, it is high time to make the dough, because this recipe requires a long rest period.

You must therefore mix the eggs, cream, salt, sugar, yeast and flour then head to the refrigerator for 24 hours.

Spread the dough with your fingertips about 3 to 4 millimeters thick and cut it into diamonds then make an incision in the middle.

Immerse the loops in the simmering oil. Take them out after 2 minutes then dry them on absorbent paper. Finally, all you have to do is sprinkle them with icing sugar.

These braids are an absolute treat to the palate and the eyes! Good tasting…
