If they were vegetarian non-profit/activist hackers, they would only get their data back if they only process cauliflower from now on

Paying for ransomware is never recommended, but actually you see in these kinds of big cases that they do it anyway. (It’s useful for this one company, of course, but it maintains the business model).
However, what if we actually get some form of ‘terrorist’ hacks, as illustrated in my comment. Then companies can no longer just buy themselves out.
So, securing is more important than insuring (or having a pocket of money to buy yourself free).
