Well, it turns out that several meta-analysis studies have shown that the isoflavones (phytoestrogen family) found in soy can reduce menopause symptoms. Said Dr. Rimbawan who is a Nutrition Expert at the Bogor Agricultural University (IPB) at the Webinar program held by PT. Amerta Indah Otsuka, daily intake of 135 milligrams of isoflavones for one week (equivalent to 6.8 grains of soybeans / day) reduces menopausal symptoms. “The largest amino acid content in tempeh is arginine. Dr. Forests revealed an intervention study giving 160 grams of steamed tempeh given every day for four weeks in menopausal women. From the results of these studies, consumption of tempeh can improve lipid profiles, namely reducing total cholesterol levels by 6%. LDL cholesterol also fell by 5.8%, and triglycerides decreased by 11.7%.
Even so, it cannot increase HDL cholesterol levels. “Consumption of tempeh is also known to increase the activity of primary antioxidant enzymes and increase zinc levels,” explained Dr. Forester. Conversely, consumption of tempeh reduces Malondialdehyde (a marker of oxidative stress) by 10%.
Thus the high content of amino acids and unsaturated fatty acids and isoflavones in tempeh have benefits as inhibitors of cholesterol synthesis, inhibitors of cholesterol abscess, inhibitors of LDL oxidation and antioxidant benefits. “So that it can lower body fat and inhibit the oxidation process and free radicals,” explained Dr. Rimbawan.
