Tiramisu is so good that we will eat it all year round. But sometimes it can be a bit too heavy in the hottest season. Moreover, varying a little allows us to discover new recipes that will enter our repertoire without any regrets. This is why today we offer a fresh and delicious tiramisu in a summer version to amaze everyone at the table.
Ingredients
a) 500 grams of mascarpone cheese;
b) 100 grams of sugar;
c) 100 ml of fresh whipping cream;
d) three eggs;
e) 200 grams of ladyfingers;
f) 2 slices of watermelon;
g) chocolate chips to taste;
h) menta q. b.
Preparation
First we beat the eggs and sugar together. We need to get a clear, bubbly blend. At this point we add the mascarpone, incorporating it gently. As always, the goal is not to dismantle the eggs. In this way our tiramisu will remain fluffy and light.
Now we need to get the watermelon juice from the two slices we have set aside. Cut them into cubes, put them in a colander and mash them with a spoon. The juice we will get will serve us instead of coffee. In fact, here we will dip our ladyfingers for a couple of seconds.
After having wet them, we create the first layer on the bottom of our pan. Let’s spread the mascarpone cream on top and continue like this for at least another layer. Between one and the other, let’s sprinkle our chocolate chips on top. This is a good substitute for cocoa powder, because it adds a crunch that wouldn’t otherwise be there. Once we have reached the last layer, we level the surface.
We put the tiramisu in the fridge for at least a couple of hours so that the cream becomes stiff. After this time, we can dedicate ourselves to decoration. To do this we use watermelon cut into cubes, triangles or using cookie cutters. To finish, we use the whipped cream and mint.
We will thus have obtained a fresh and delicious tiramisu in a summer version to amaze everyone at the table.
