With its cathedral, market stalls and unique old town flair, Freiburg im Breisgau is a recommended destination for excursions. The culinary scene has always been ambitious, but today it is more diverse than ever.
Markgräflerland stands for Gutedel and down-to-earth cuisine, for the best connections to Switzerland and Alsace, for a culinary standard that cannot be found everywhere in Germany. And yet a place like this can still develop further. He has in recent years!
If you don’t just want to go on a day trip to the Breisgau, you can stay overnight. Approximately in «Markgräfler Hof», unless the «Colombi» mentioned under restaurants should be the address of choice. You should definitely take bread with you the next day. There is a lot in Freiburg: something from Brotbruder or from the Pfeife Bakery. (The panettone will not be available until shortly before Christmas.) The fact that there are also great gastronomic addresses in the Freiburg area is common culinary knowledge – but worth a story of its own.
1. “Wolf’s cave”: everything new, everything ambitious
Martin Fauster used to cook in Munich’s “Königshof” and probably didn’t get a second star in the “Michelin Guide” because the kitchen was responsible for the entire hotel and the restaurant was huge. He deserved it – and he deserved it in Freiburg. I’ve just enjoyed lobster Thermidor (where else can you find something like that?), sensational pork chop from nearby Hofgut Silva, Bresse pigeon with cherries. The best wines from the neighboring Kaiserstuhl are still available here, even in mature vintages.

2. “Eichhalde”: Italian cuisine in a great way
This restaurant has been around for a long time, it belongs in the collective consciousness of Freiburg gourmets. But it is under the direction of Federico Campolattano Restaurant in the Freiburg district of Herdern only since 2019. Here you can find out how good risotto can taste and that Parmigiano does not necessarily mean mass-produced goods from the supermarket. In this restaurant you should take your time and follow the wine recommendations of the boss.

3. «Drexlers Restaurant»: double concept in summer
This runs most evenings of the week (at least until the end of August). Restaurant a simpler concept that takes wine and bread, every Friday and Saturday there is the more ambitious evening menu. Such two-pronged principles should have a future in gastronomy. Especially since the salsiccia from our own production or the homemade tagliatelle testify to exceptional quality standards. 4. «Jacobi»: new and cool
One of the newest discoveries in Freiburg. Christoph Kaiser and his team only opened in 2022 and have since been able to attract a large number of Freiburg residents. Probably also because dishes like zander with cucumber and dill or apricots with lemon verbena are firstly fresh and secondly easy to understand. The water is included in the menu price, the wines on the extensive menu (many young winegrowers in the region) understandably have to be paid extra.
5. «Colombi»: Hotel legend
In the 80’s of the last century it was Restaurant This hotel is one of the leading addresses in Baden-Württemberg. Chef Alfred Klink also became a legend because generations of young chefs completed their training here. Today Henrik Weiser is the head chef, an old acquaintance (“Traube” in Efringen-Kirchen), together with his colleague Sven Usinger. Goose liver rice with cherries and Black Forest heifers with black garlic are worth a stop.

6. «Linde»: Business lunch or gourmet dinner
In times when more and more restaurants are cutting lunch service, the «Linde» in St. Georgen all the more recommendable. From Wednesday to Friday, chef Renee Rischmeyer offers a lunch that has it all (maybe a pulled pork burger!) and is very cheap. In the evenings, this restaurant is more elaborate and pleasantly Mediterranean. Veal with dried tomatoes and fregola sarda as a skin course screams Italian red wine, but can also be combined with Markgräfler wines if necessary.

7. «Hirschen»: classic or modern
You don’t even know where it’s nicer in this one Hotel in the Freiburg district of Lehen, which also has a highly recommended hotel: in the parlor or in the garden. Werner and Elias Baumgartner provide a varied cuisine, which sometimes includes cool summer dishes such as poke bowls or vegetable curry, but really comes into its own with classic dishes such as homemade lobster ravioli or mousse au chocolat.

8. «Kuro Mori»: for all purposes
Steffen Disch, the chef, ran this address in the center of Freiburg for a long time as a branch of his restaurant Raben in Horben. In the meantime he gave up the star restaurant outside of Freiburg. for «Kuro Mori» he remains responsible. The guests benefit – for example at a classic evening. There is always something else to discover here, even if it’s just a country bread from the bread brother (see introduction) with miso butter.
9. «Basho-An»: Wagyu und Sake
Just eat sushi? Sure, that works. At lunchtime, the guests mainly choose the simple and quick pleasure variants. In the evening, of course, the hungry customer could also indulge in luxury Menu and order Wagyu beef as a main course in addition to extra-large sushi portions and Japanese starters. Costs 155 euros including dessert and could be supplemented with a wonderful variety of sake.
