This prize rewards the best preparation submitted to the competition of the gastronomic brotherhood dedicated to Caen-style tripe, out of 132 participants this year.
This is the first time that a competitor has won the highest prize twice. With his team, François Lemarinier presented five dishes in total. The other four won a major international prize, the reward just below the Tripière d’or.
In Cagny, François grew up. In Cagny, he started in the butchery. “At 14, I wanted to be a tiler. But the butcher, who was our neighbor, told my mother that he was looking for an apprentice…” The 57-year-old craftsman has since never left the small town of 1,700 inhabitants, southeast of Caen. But he is considering passing the baton to his partner in the years to come.
