Te all the inhabitants of the Nord and Pas-de-Calais know it: the Flanders waffle, flat and thin in appearance. She gave birth to the Lille waffle, which is stuffed. For purists, the waffle must be filled with vergeoise, the beet sugar from the North.
We owe its fame in the world to the creator of Maison Meert in Lille who invented in 1849 the flat waffle filled with sugar, butter and vanilla from Madagascar. But 200 years after this invention, many pastry chefs from the Nord and Pas-de-Calais have developed their recipes waffles filled with vergeoise.

After having identified nearly 50 producers thanks to 800 contributions, the selection committee – led by the culinary columnist well known to France Bleu Nord listeners Pépée Le Mat – selected five finalists who will therefore be in competition from March 22 to 26.
