Field and La Degustation defended the Michelin star. But other companies also have “biba”

The Prague restaurants Field and La Degustation Bohême Bourgeoise defended one star in the Michelin gastronomic guide. Prague has no new stars. The only two Czech representatives with asterisks remain in the prestigious guide to European restaurants. This follows from a gastronomic guide published by Michelin on Thursday.

“Prague offers something for everyone and the ever-expanding selection of restaurants expands its dynamic culinary scene. Many of these restaurants are located outside the city center: modern establishments that reflect the modern spirit of Prague while respecting the country’s culinary traditions,” said Gwendal Poullennec, international guide director.

According to chef Radek Kašpárek from Field, the fifth defense of the Michelin star confirms that the company managed to survive in a difficult period and maintained its quality.

Kašpárek also thanked the co-owner of the restaurant Miroslav Nosk for their support, according to him last year was the most difficult since the opening of the company. He has been a co-owner of the restaurant since 2014. “We were closed for half a year and we managed to keep our great team, I’m proud of that. I’m very happy with the defense, thank you to all my colleagues, the star is for you all!” added the chef.

According to the chef of the second awarded restaurant, Oldřich Sahajdák, thanks to the guide and staff. “We thank the Michelin Guide for giving us the star again. And the second thanks goes to our staff, who do a great job,” he said.

Five restaurants were included in the Michelin selection as “good quality at a good price”, the so-called Bib. The position was defended by Na Kopci, Divinis and Eska. The Eatery has recently been added, Dejvická 34 by Tomáš Černý. On the contrary, there is no longer Sansho chef Paul Day in it.

Prague won the Michelin star for the first time in 2008, when the Allegro restaurant at the Four Seasons Hotel and its chef Andrea Accordi could be proud of it. He received a star for Allegro three times. Allegro has since ceased to exist.

In 2009, the star at the Hilton Hotel of the famous British chef Gordon Ramsay also received a star, but it disappeared before the award was announced. Alcron held the star from 2012 before losing it in 2018. In total, five Prague restaurants have won the star so far.

One star Michelin indicates a very good restaurant in its category, two stars excellent cuisine that is worth a visit, and three stars exceptional cuisine that is worth a special trip. Prague restaurants have never received more than one star in one evaluation.
