INTERVIEW: The popular wine sausage belongs to the so-called family silverware. It is a traditional Czech specialty of butchers and sausage makers. Unlike classic sausages, they are not smoked, but sold fresh. “That’s what makes wine sausage special, and it has to be processed quickly. If they sell it packaged somewhere, it contains chemical preservatives,” Martin Čejka, who is the fourth generation of a famous butcher and charcuterie family, told PrahaIN.cz.
Classic sausages that are smoked with warm or cold smoke are simply heated in hot water. Wine sausage is unique in that it is sold raw, without any heat treatment. It is an excellent, traditional specialty.
“Therefore, always pay attention to the specified expiration date. Ideally, it should be processed within 48 hours of purchase. It is precisely because it is sold fresh and intended for quick consumption that it is also so good. I tell everyone to check when it was made when buying. If the expiration date is longer, it means it will also contain added preservatives. I always recommend buying really high-quality, traditional chemical-free wine sausage fresh at any butcher shop. Not packaged,” advises PrahaIN.cz readers Martin Čejka.

At the same time, he reminds that the most important role in the production of good wine sausage is played by quality raw materials. And also honest preparation. “We have our own trick for wine sausage. We don’t give the classic breadcrumbs, but we soak the bun in wine and mix it into the meat. This makes the quality higher. The fact that we use high-quality Moravian wine plays an important role. Not molasses in boxes,” emphasized Martin Čejka.

A chemical bomb
He reminds that the same applies to other packaged semi-finished products. For example, for meatloaf.
“Homemade meatloaf made from freshly ground and seasoned meat is amazing. However, the packaged semi-finished product is pre-salted. Sometimes it also contains other additives such as stabilizers, dyes, antioxidants or glutamates to make it last longer. Basically, it is packed in a protective atmosphere. Therefore, the expiration date is not decisive for minced meat in the supermarket.

The longer the expiration date, the more likely it is to contain all of these ingredients. It is therefore worth reading the labels, where you will find out not only what percentage of meat the product actually contains, but also what other ingredients the manufacturers have used,” pointed out Martin Čejka.
