“Preserve the landscape with enjoyment” is the motto of the fifth Culinary Backwoods Weeks in the Black Forest biosphere area, which takes place from October 1st to 15th. A total of 20 participating restaurants from the southern Black Forest will then have at least three Hinterwälder beef dishes on their menu.
There will be a culinary foretaste on Friday, September 22nd, at the Freiburg Münstermarkt. In the Marktgasse opposite the Fischbrunnen (directly at the entrance to the Basler Hof), from 9.30 a.m. participants in the Culinary Backwoods Weeks will provide information at the Black Forest Biosphere Reserve’s joint stand. A guided walk around the Münstermarkt with city guide Barbara Schneider offers insights into what is happening at the market and establishes the connection between the biosphere area and Freiburg. The tour starts at 10 a.m. and 12 p.m. at the stand. After the tour there is a “tasting” of Hinterwälder beef. The tour is free and anyone interested can take part spontaneously.
The Culinary Backwoods Weeks promote keeping open the protected common pastures in the southern Black Forest. In addition, the regional marketing initiative guarantees good prices for agricultural businesses and ensures short transport routes for slaughter that is as stress-free as possible.
In addition to the participating catering establishments, ten farmers supply the meat of their animals from species-appropriate pasture-raised animals. The actors come from the districts of Lörrach, Waldshut and Breisgau-Hochschwarzwald. Walter Kemkes, managing director of the Black Forest Biosphere Reserve, knows how important it is to keep the common areas open and to involve local people: “We support projects that aim to bring people and nature into harmony. We want to offer local people from our member communities, agriculture and catering businesses an opportunity to actively shape this process.” Part-time farmer Daniela Zimmermann from a Hinterwälder breeding farm in Fröhnd, who will also be at the Münstermarkt, is also happy about this: “I would like to exchange ideas with market visitors about agriculture in the biosphere area and the relationship between town and country.”
The gastronomic establishments involved in the Culinary Hinterwälder Weeks are located between Feldberg, Hinterzarten, the Hotzenwald, the Wiesental and the Belchen. More information:
