Nine out of ten French people meet in January around a pancake, to celebrate Epiphany *. This year it will take place on Sunday, January 3, 2021.
At La Pâtisserie de Chartres (Eure-et-Loir), the pancakes will be on sale tomorrow, Saturday, January 2, 2021. “And throughout the month of January”, specifies Alexandre Heslouis, the manager.
For the frangipane pancake: the crushed fines in Chartres!
This year he hopes to sell between 1,500 and 1,800 patties. Apples, pistachios and morello cherries, but above all the essential frangipane, “Entirely homemade”, promises Alexandre Heslouis.
The fines are crushed directly in the Chartrain laboratory. And for this artisanal house, it is essential to promote French craftsmanship.
