The New York roll, NY roll or croissant roll is the new fashionable pastry. Imagined in the kitchens of the New York bakery Lafayette Grand Café & Bakery, it is a croissant dough rolled and filled with pastry cream, then decorated on top with an icing, usually chocolate. If for the moment, only one New York bakery offers it, in Lyon, the success of this 2.0 filled croissant is undeniable and it is on the way to becoming a must in bakeries.
Lyon 9e. Guillaume Flochon, a new recipe every month (in limited edition)
It was during the Chocolate Fair in November 2022 that the pastry chef from Vais offered his NY rolls for the first time. And faced with its success, Guillaume Flochon has decided to offer it only on the last Thursdays, Fridays and Saturdays of each month, with a new recipe each time. On April 27, 28 and 29, a NY roll with a “light” vanilla pastry cream (whipped cream style) and a pecan praline will garnish the roll of croissant dough, the top of which will be garnished with a chocolate with milk and caramelized pecans.
The result is incredibly greedy, very thin despite the size of the roll, and not overwhelming. A delicacy to pick up on site or to order, there will only be 500. If you don’t eat it right away, the chef offers to put it in the fridge and take it out 30 minutes before tasting, so that the dough crescent warms slightly.

Lyon 5e. Grains de Sucres, the divine pistachio NY roll
It’s one of our favorite pastry shops in Lyon, and for good reason: everything that comes out of its production lab is delicious. In March 2023, the chef had fun making a pistachio NY roll on the weekend… and given its success, it is now possible to pick it up every day.
Its particularity: the roll is cut in two in order to evenly distribute its garnish, a mascarpone with homemade Iranian pistachio cream. Everything is “closed” with a white chocolate icing and pistachio cream, and pieces of shortbread pistachios. The dough is light and crispy, the interior melting, and the result absolutely divine.
45 rue de Trion. Tuesday to Friday from 7 a.m. to 7:30 p.m., Saturday until 6:30 p.m., Sunday from 8 a.m. to 1 p.m.

Caluire-et-Cuire. Jinsi, there is something for everyone
In his brand new bakery, Kevin Jinsi has been working hard to bring Lyonnais to the Plateau and even to Caluire since its recent opening in December 2022. So, alongside his pastries (including superb raspberry croissants), he offers New York rolls that he offers in as many flavors as his flans (our favorite remains the traditional vanilla one): chocolate, lemon, pistachio, caramel but also black sesame. They are all very generous (perhaps even a little too much) in pastry cream, but the result is still very good.

Lyon 2e. Maison Antoine, NY praline cream roll or pink praline
Generous and colorful pastries and pastries are displayed in the windows of this pink candy box on the Quai Saint-Antoine. There too, the NY roll is available in a single version: praline cream and dulcey topping and hazelnut chips. And since the end of April, a variation around the pink praline has appeared: if the round shape is kept, the filling is placed in the middle, like in a vol-au-vent or well of love. It is extremely greedy. A word of advice: eat it for two!
