Among the brick houses in Eerste Jacob van Campenstraat, a building stands out with its olive-colored facade and richly filled flower boxes in front of the windows on the first and second floor. Tijn Verstappen (39), owner of Van ‘t Spit, Le Forel and Pepito, among others, recently opened a second Linguini branch there. “An affordable pasta restaurant, where you can eat in a cozy setting,” says Verstappen.
The menu has been put together by chef Lorenzo Isodoro (29), who is in charge of the kitchen at both locations. “I try to place as many Italian staff in the kitchen as possible to approximate the authentic flavors,” says Verstappen.
The menu includes many classic pastas, served in a pan for one person or a larger one, suitable for three to four people. Think of pasta carbonara, truffle with mushrooms and vongole. All pasta – such as spaghetti, rigatoni, linguine – comes from Il Pastificio, the pasta maker in De Pijp, who makes everything in the traditional way.
There are also ten antipasti on the menu, including the burrata (€15), parmigiana di melanzane (€13) and carpaccio (€12), and a number of desserts from Italian cuisine, such as the tiramisu (€7) and the sgroppino (€8). The wine list consists exclusively of Italian wines, except for rosé; it comes from France.
“The most important thing is that people leave here with a feeling that they have really been out,” says Verstappen. “We try to be an accessible restaurant, where you can go out and stay at home for around fifty euros.”
