Poultry needles with leeks, onions and sesame
For 4 people
– 4 chicken cutlets
– 4 small leeks
– 4 spring onions
– 1 tbsp dehydrated chicken stock
– 1 tbsp sesame seeds
– 2 tbsp of goose fat (or failing that, olive oil)
– Salt and pepper
Preparing the chicken
– Salt and pepper the escalopes
– Cut the escalopes into thin strips
– To book
Preparation of ingredients
– Wash and rinse the leeks well
– Cut the leeks into slices
– Wash the spring onions
– Leave them whole
– Mix the broth in a glass of hot water to reconstitute it
– Brown the sesame seeds in a frying pan until browned
– Reserve in a bowl
Cooking
– Heat the goose fat or oil in a frying pan
– Brown the chicken fillets
– Adjust seasoning
– Leave in a deep plate and keep warm
– Brown the sliced leeks in the chicken juices
– For coloring add the broth
– Add the spring onions
– Bring to a boil and cook for 10 minutes
– Add the meat to reheat it
Service
– At the last minute add the sesame seeds
– Serve on a hot plate
– On each plate add a new onion
This is a complete dietary dish that is very quick to prepare.
