You are certainly familiar with a similar cake, in some variation your grandmother, aunt or neighbor baked it every summer. The pliable dough was measured only with a cup of used yogurt, a generous layer of ripe summer fruit came on top (therefore it didn’t even have to be sweetened much) and there was no missing a crunchy crumb.
Make the crumbs flaky like I did, or stick with the classic flour, you won’t be disappointed. Don’t be alarmed by the amount of fruit, it adds juiciness to the cakes and in the peak season you will appreciate that a larger amount is used for baking. For the cottage version, bake the cake from half the amount in a remoska, just don’t open its lid during baking so that it bakes well.
Yogurt cake with fruit and crumb (currant)
For a 20 x 25 cm sheet, you need:
1 cup of Greek or cream yogurt (150 g) 1 cup of oil (150 ml) 1 cup of cane sugar (100 g) 1 vanilla sugar 2 eggs 1 pinch of salt 2 cups of semi-coarse flour (200 g) 1 teaspoon of baking powder 6 cups of red currants , blueberries, blackberries, raspberries or strawberries (600 g) Powdered sugar for sprinkling
On a small scale:
4 tablespoons of butter 4 tablespoons of cane sugar 5 tablespoons of fine flakes or semi-coarse flour ¼ teaspoon of cinnamon
Approach
Wash the fruit and let it dry. Mix the melted butter with sugar, flakes or flour and cinnamon on a crumbly surface and let it harden in the fridge for the time being. Line a baking sheet with baking paper or grease with butter and sprinkle with flour. Heat the oven to 180°C. Beat the yogurt with sunflower or rapeseed oil or melted butter, both sugars, eggs and salt. Mix in the flour and baking powder and spread on the baking sheet. Sprinkle with currants and breadcrumbs and bake for about 45 minutes or until a skewer inserted into the dough comes out dry. After it has cooled, add sugar and if it is warm, store it in a closed jar in the refrigerator.
Tip: Freeze the de-stemmed and washed currants and then bake the cake at any time of the year, its taste will bring you back to your grandmother’s summer cottage…
