– 500 ml of whole milk
– 50 g of butter
– 40 g of 00 flour

Let’s prepare stuffed cannelloni together for Christmas
For fresh egg pasta, we work together flour and egg until we have obtained a smooth and homogeneous mixture, create a ball and let it rest for about 30 minutes in a warm, dry place while we prepare the filling. In a fairly high pan let it fry for a few minutes onion, leeks, carrots, celery and once wilted, add the minced meat and let it brown well. Add the red face and let it evaporate on a high flame. Add the tomato puree and let it cook after adding salt. In the meantime let’s prepare our bechamel. Melt the butter together with the sifted flour in a saucepan, stirring with a whisk until a smooth and homogeneous cream has formed. Let’s add milk, salt and nutmeg and continue until the sauce has thickened and is free of lumps.
When the ragù and bechamel are ready, let them cool and we combine the two compounds. We also add the grated cheese and now we are ready to fill our ready-made or prepared stuffed cannelloni with homemade egg pasta. Once you have stuffed the stuffed cannelloni and placed on a baking trayspread plenty of tomato puree, grated cheese and bake for approximately 1 hour at 200° in a pre-heated oven. The last 10 minutes we turn on the grill so as to create a tasty and crunchy crust. Let them cool a little and serve them for our Christmas lunch.
