Recipe idea: Apples in a bed of chocolate
Woke up and get out of bed, there are apples in a chocolate bed and a blanket of quince jelly.
Preparation and preparation: approx. 40 minutes, baking: approx. 45 minutes.
9 small apples (approx. 100 g each; e.g. Gala), peeled
1 organic lemon, 1/2 grated zest, set aside, and whole juice
80g sugar
4 egg yolks
4 proteins
1 pinch of salt
2 tbsp sugar
80g flour
3 tbsp chocolate powder
1 teaspoon cocoa powder
2 tbsp quince jelly, slightly warmed
And this is how it’s done:
Core the apples from the fly using a knife, leaving the stems standing, brush the apples with lemon juice and set aside. Mix the sugar, egg yolks and reserved lemon peel in a bowl with the whisk of a hand mixer until the mixture is light in color.
Beat the egg whites with the salt until stiff. Add the sugar and continue beating until the egg whites are shiny. Mix the flour with the chocolate and cocoa powder, add it to the mixture with the beaten egg whites and carefully fold it in with the rubber spatula. Pour the dough into the prepared pan. Press the reserved apples into the dough with the stems facing up.
Bake: approx. 45 minutes in the lower half of the oven preheated to 180 degrees. Remove and spread the apples with the jelly. Cool the cake slightly, cut into pieces, remove from the tin and cool on a wire rack.
