Traditional Pasta Carbonara recipe

Ingredients for 2-3 servings:

400 g of pasta (preferably spaghetti or bucatini) 150 g of bacon or pancetta, diced 3 large eggs, at room temperature 1 small onion, finely chopped 2 cloves of garlic, finely chopped 1/2 cup of freshly grated Parmesan cheese 1/ 2 cups freshly grated Pecorino Romano Salt and freshly ground black pepper Fresh basil leaves for garnish ½ tsp olive oil

Method of preparation

Cook pasta in a large pot of lightly salted water according to package directions until done. Don’t drain the water yet, you’ll need it later.

Heat a large frying pan over medium heat with half a teaspoon of olive oil. Add the bacon or pancetta and fry until it becomes crispy and renders its fat in the pan. Add the onion and garlic, and sauté until soft and slightly golden. Then pour over 2 ladles of pasta water and let it boil while you prepare the eggs. Add more pasta water if needed.

In a bowl, beat the eggs well. Add half the amount of parmesan and half the amount of grated pecorino romano. Mix well to obtain a homogeneous mixture. Season with freshly ground black pepper.

Place the drained pasta in the pan with the bacon and onion. Stir gently to coat them in the bacon fat (a few minutes).

Remove the pan from the heat and immediately add the egg and cheese mixture over the pasta. Stir quickly to avoid curdling the egg. If the sauce seems too thick, gradually add a little water in which the pasta was cooked to thin it out and cook for another 1 minute.

Season with salt and pepper to taste. Add the remaining parmesan and grated pecorino romano.

Serve the pasta carbonara immediately, sprinkled with a little freshly ground pepper and fresh basil leaves for added freshness.
