Basic macaron recipe by Damián Betular
This famous Argentine chef and pastry chef, known for his participation in various television programs, explains step by step his macaron recipe, his specialty, so that we can easily recreate it at home and have restaurant-like results. Ingredients:
- Butter (necessary amount)
- 125 g almond flour
- 125 g powdered sugar
- 125 g egg whites (approx. 4 units)
- 100 g of common sugar
- Vegetable coloring of the desired color
Ingredients for the filling (strawberry flavor):
- Milk cream
- strawberry paste
- Caramel sauce
- Café
Ingredients for the ganache (optional):
- 100 cc of milk cream
- 200 g of the chosen chocolate (black or white)

Step by Step:
- Paso 1: First of all you must put a bowl in a bain-marie with the egg whites and sugar. Beat until it becomes a homogeneous mixture.
- Paso 2: Once it comes together, take it off the heat and beat with an electric mixer until stiff (like a meringue).
- Paso 3: Next, add the previously sifted flour with enveloping movements so as not to lose the air obtained. If necessary, integrate it in two stages.
- Paso 4: Color the mixture the color you want with the chosen vegetable dye. If several colors are desired, separate equal parts of the mixture into different bowls and dye them, integrating the coloring with a spatula.
- Paso 5: Place the preparation in a sleeve and place it on a greased plate sprinkled with powdered sugar. With the sleeve, shape the mixture into little caps.
- Paso 6: You should let it rest for 2 hours and cook in the oven at a temperature of 160 degrees for approximately 4 minutes on each side. Let cool and take off.
- Paso 7: Emulsify the milk cream with the desired amount of the flavor of the filling, whether strawberry, coffee, mint or chocolate.
- Paso 8: If you want to make a ganache, heat the cream and add it to the chopped chocolate, then let it integrate and assemble.
- Paso 9: Let the filling cool and fill the macarons with a sleeve.
