In the meantime, the restaurant space, on the ground floor of Olatu Leku, had closed its doors. The managers of Olatu Leku, Estia and the CCI of Bayonne Pays Basque, offered Court Circuit to revive it. The opportunity to offer a showcase for the project. An opportunity that Flore Bonard seized.
Priority to local products
“It’s not really a restaurant, since there is no kitchen. It would be complicated in a place like Olatu Leku, made up of offices, to produce odors during the preparation of meals. Everything is prepared daily in our laboratory, in the Maignon area, and brought in every morning. »
These are exclusively dishes prepared from fresh and, for the most part, local products. You can taste the chicken from the Iparla farm, roasted vegetables from the Pintan farm. Also on the menu: strawberry baba from Ferme Dache Dise, Iñaki Berhocoirigoin cheese, pork loin confit from Maison Massonde, Irina Pasta pasta, from Arbonne, etc. “We also offer homemade taloa made from the very seed of the big red corn from Stéphane Michéléna, in Espelette, which makes it possible to obtain soft pancakes”, emphasizes Flore Bonard.
Basque drinks too
On a daily basis, it is Lorna who takes care of welcoming and serving customers in this original restaurant area. The drinks are just as Basque as the products intended for the kitchen, from Euskola to Akerbeltz beer, via the P’tis fruit and vegetable juices from Argi. “We work as much as possible with local products. We retain all those that we can find and that enter into our costs, ”explains Flore Bonard.
With Olatu Leku’s restaurant, Court Circuit has therefore set up shop at 100 avenue de l’Adour, after having developed in the register of prepared meals, delivered to professional customers. Court Circuit has also installed two vending machines. One, at the foot of the building where his laboratory is located, 10 route de Pitoys, another in the emergency parking lot of the Belharra clinic in Bayonne. “It’s an experiment that we are conducting and which for the moment has turned out to be rather positive, confides Flore Bonard. But we do not want to multiply the distributors. »
