I have the Corsair K70 RBG MK.2 myself, it seems to be practically the same as this new pro. Super nice thing that is nice and heavy and sturdy.
That said, I don’t feel like my keyboard’s 1000hz polling rate has ever limited me. In theory it is better yes.
Suppose you are playing a game and you press a key. There is a point where the game checks if a button has been pressed and that is usually once per frame. Once you are too late for it to be registered on the frame.
The 8khz keyboard will be able to transmit 7 extra samples in time compared to the 1khz keyboard, so that is 0.875 milliseconds.
At 60 fps, you have a frame every 16.6 milliseconds. 0.875 / 16.6 = ~5%
So at 60fps, the higher polling rate gives you an extra 5% time to register that same frame of your key.
At 144fps by the same calculation, it comes out at 12.6%.
So the numbers are good!
But I think what you will notice in practice will be very little.
