A popular Tokyo restaurant has sparked controversy on social media after a detail from the kitchen was revealed. Staff were dipping the delicious pork skewers into a bowl of sauce that hadn’t been washed in 90 years, Oddity Central writes.
Abe-chan Restaurant, located in Tokyo’s Azabu Juban shopping district, was recently featured on a popular TV show, where it was revealed that one of the successful details of its cuisine is a fishy-looking dish covered in gelatinous mass .
It’s a container of sauce in which pork skewers have been dipped for the past 90 years, and the dark brown mass around it is a sauce that has drained and hardened over the decades. According to third-generation owner Abe-chan, the bowl has never been cleaned.
Instead of cleaning the bowl every day after closing, Abe-chan’s staff simply pours the remaining sauce, which only enhances its flavor. To the owners of the place it is a treasure, on display for public viewing right next to the charcoal grill.
The publication notes that Abe-chan was founded in 1933 by the current owner’s grandfather, and the sauce bowl appeared then. The tradition of adding the sauce without cleaning the container has been followed by all three generations, and the current owner is confident that this has contributed to the success of the family business.
During the show, experts were asked about potential hygiene hazards, and one of them said that if the sauce is cooked long enough, bacterial contamination shouldn’t pose any danger.
Patrons of the Abe-chan restaurant defended the establishment, claiming that they have been eating there for many years and have never had any health problems from the food.
It is not known how Abe-chan will deal with criticism of his long-standing tradition. Some sources say the owner has decided to continue the business despite the controversy, while others say it was cleaned for the first time in 90 years.
