The historic quays of the Trois Grappes cellar hosted their last harvest this fall, in front of the wine cooperative. At Le Pouget, the brand new docks will come into operation during the next harvest. They are positioned at the rear of the building. “We rotate 180 °”, summarizes David Reverbel, director of the cooperative. Not a simple rotation, it is a question of operating the transformation, in depth, of a cellar definitely turned towards the future.
Goal : “Rationalize, reorganize flows and modernize our vinification tool”, reveals the manager of the “bulk” cellar (read below).
And to ensure the makeover, an investment project “ “phased “and strategic “ of € 3.1 million is spread over three years.
“ Delivery is expected at the end of the first quarter of 2022 “, abounds David Roussel, project manager. Ambitious project, “the adaptation of the production tool provides a response to the new demands of the marketers, in particular in terms of traceability of the batches”. HVE flows, high environmental value, and conventional can in particular be “worked” in parallel.
Harvest reception, juice extraction, fermentation, storage workshops: the structure is starting up again in a spirit of eco-design and increased control of water and energy consumption.
And, in addition to civil engineering, a significant part of the investment is linked “aromatic”, reveals David Reverbel. The site is thus equipped with a nitrogen plant and a leis (grape must) stall park: twelve “fridge vats” intended to develop “flavor enhancers” products, useful for enhancing the blends. “We are going to make a qualitative leap”, appreciates the director.
Aromatic approach, traceability, control and optimization of production costs, the orientations of the Trois Grappes cellar have been matured for a long time.
They have the ambition to respond to a very demanding bulk market in terms of quality.
